I love soup year round no matter the temperature outside. This Yummy Beef Vegetable Soup is easy, quick, and cheap to make which puts it at the top of my list!
There are so many different ways to make this soup, and I am sure most have tried a version of it. I make it different each time, depending on what I have available on hand. Did I mention it is low fat and cheap to make?!?!

The one nice thing about this beef vegetable soup is it’s so quick to put together. 🙂
Yummy Beef Vegetable Soup

This would also make an easy crockpot meal. Just simply brown the hamburger and then combine all of the ingredients in crockpot. Cook on low for 6-8 hours.
Ingredients
- 1 to 1 1/2 Ibs ground beef or ground turkey
- 1 can (15 oz) diced tomatoes
- 1 can (6oz) tomato paste
- 16 oz. package frozen mixed vegetable
- Handful of chopped cabbage
- 1 small package of frozen corn
- 6 cups of water
- 6 beef bouillon cubes
- 1/2 tsp of Italian seasoning
Instructions
- Brown meat (you could also add an onion) and drain grease. Combine all ingredients, and cook on low for about an hour. You can salt and pepper to taste!
- I also throw in any fresh vegetables I may have in my refrigerator, which makes it so tasty!
