I am sharing a summer go-to strawberry pie recipe that my family uses for any get-together. I remember when I was a little girl, we would head to Shoney’s and my parents would bring home a strawberry pie. It was my favorite dessert when I was growing up and I look just as forward to it now. The wonderful thing is, it is so easy to make!! I usually stick to recipes that only require a few ingredients and little time in the kitchen. This is that recipe! I hope you enjoy it.
Ingredients
- 1 refrigerated pie crust
- 2 cup sliced strawberries
- 2 1/2 tbsp cornstarch
- 1 1/4 cup sugar
- 1 1/2 cup water
- 1 box strawberry gelatin 3 oz. (I buy sugar free strawberry Jello)
- 1 container of cool whip
Instructions
- Place pie crust in pie pan and crimp edge or use ready to fill frozen crust already in the pan.
- Use a fork to poke holes in the bottom.
- Bake for 15-18 minutes or until edges are browned.
- Allow cooling.
- Layer bottom with the sliced strawberries
- Stir together water sugar and cornstarch and bring to a boil.
- Simmer, constantly stirring, until thickened.
- Remove from heat, add Jell-O and stir until dissolved.
- Pour mixture over strawberries.
- Refrigerate until set.
- Decorate with Cool Whip before serving. (I use Cool Whip Lite) I also like to place a couple bowls with blueberries and raspberries next to the pie for those who would like extra toppings.

TIPS FOR PRESENTATION
You don’t have to spend a lot to make a table presentation look beautiful. Just a simple stand or platter, cloth napkins, pretty plates, and fresh flowers will make a big statement. I also shop antique stores for silver, silverware, and unique candlesticks. It is an excellent way to save money and add character to a table.
