These Berry White Chocolate Drop Scones are the perfect treat if you are craving something tasty with just a hint of sweetness!
Berry White Chocolate Drop Scones
A few years ago, I was given this Berry White Chocolate Drop Scone recipe from a dear friend, Lauren Bretz. Recently, I was craving these scones and couldn’t find my recipe. Lauren was so sweet to quickly forward the recipe to me again and said she discovered them from a cookbook called Grazing by Julie Van Rosendaal. The cookbook contains a healthier approach to finger foods without compromising taste. I quickly got on the computer and ordered it! I love finger foods!
Wheat Flour & Fruit
There are a thousand variations of scones, and I love that this recipe has fruit and wheat flour in it. That alone makes this recipe healthier, right?!? It also gives me an excuse to eat more than one. 🙂
Notes
I love that this recipe contains wheat flour and no heavy whipping cream.
Ingredients
- 1 1/2 cups whole wheat flour
- 1 cup flour
- 1/2 cup sugar
- 1 Tbsp baking powder
- 1/2 tsp salt
- 1/4 cup butter or margarine
- 1 cup milk
- 1 egg
- 1 tsp Vanilla extract (optional)
- 1 cup fresh or frozen (unthawed) raspberries, blackberries or blueberries
- 1/2 cup chopped white chocolate
Instructions
- Preheat oven to 400 F.
- In a large bowl combine flours, sugar, baking powder and salt. Cut in the butter until well blended and crumbly. In a small bowl stir together milk and egg ( I added 1 tsp of vanilla); then add the berries and chocolate and stir gently just until the mixture is combined.
- Drop large spoonfuls of dough onto a cookie sheet that has been sprayed with non-stick spray.(If you make thicker dough, turn it out onto a lightly floured surface and pat into a circle 1/2 " thick, then cut into wedges with a knife or into rounds with a cookie cutter or glass rim.) Sprinkle the top with a little sugar if you want.
- Bake for 20-25 minutes, until golden. Serve warm
